Ingredients

5 cups organic, or spray-free curly kale (Curly and spray-free/organic kale is less bitter, you will taste the difference).
3 carrots, roughly chopped
1-2 cloves garlic
1 lemon, juiced, or 3 tbsp lemon juice
1 ½ tablespoon olive oil
4 tablespoons flaked almonds (optional)

Method

1) Wash the kale in cool water to remove all dirt and bugs.

2) Place all the ingredients in a food processor and blend until a fine consistency.

3) Top with flaked almonds or roasted kumra and sliced avocado.

How to utilise this salad.
1) On its own as a side dish.

2) Add quinoa, tofu, or protein and serve for lunch or dinner.

3) Add a few handfuls of it into soups, casseroles, and even omelettes.

4) As a healthy filling with cream cheese or hummus on bread.

TIP! I try and double the recipe because it is such a useful salad to have in the fridge. You would have to blend the batches separately tough.
